Paul is renowned for adding a modern twist to some of Britain’s favourite dishes. He brings his passion for using the best British seasonal produce, both farmed and foraged, to our kitchen, along with his undeniable flair for creating delicious food that brings people together. Paul is working with our former Executive Chef, John Footman, to ensure a smooth transition to a new menu. John remains within our portfolio and the team thank him for all the fantastic accolades he has won for The Oxford Kitchen during his time at the restaurant.
Paul Welburn’s career has spanned top London restaurants and private yachts in the South of France. He trained with some of the best British chefs, including Gary Rhodes and Richard Corrigan, has years of Michelin-star cooking experience – including holding a star himself for five years as Head Chef at W1 – and has appeared on The Great British Menu.
Yet Paul has never forgotten his early career in his home town of Scarborough, where he learned the value of even the most humble of ingredients. Today, Paul draws on this knowledge to produce menus that reflect his heritage and training.
Paul is working alongside John throughout the Christmas period and will launch his own menus after our annual break in January. We know that you will relish the cacophony of tastes that he creates.
